I thought lager was a type of beer. I do often add minced ginger root which makes for a nice ginger ale.
This is not primarily an alcoholic brew, and IMO would not taste as good with significant alcohol.
Think fruity without significant sweetness.
My favorites so far are cranberry, lemon-lime (what I'm having right now), and pomegranate/blueberry.
Once I made orange blastoff: 2 TBS OJ, ¼ tsp turmeric, and ¼ tsp cinnamon, per pint in second fermentation.
and it was the absolute best cinnamon drink that I've ever had.
If you've never had kombucha tea, buy a bottle of unflavored and see if it's for you.
People describe it as tart sour.
More and more supermarkets carry it, so it's relatively easy to find.

then I'd certainly check out the fruits kefir,
and I still may eventually check out coconut milk kefir.
