Yeah, but we all know that app stores generates more profit in general. Duh!
There is a huge difference between those.

With this and rumours that Apple wants to drop 32bit app support in the near future, I think the switch to Cocoa is urgent

I agree, it's just weird to have 2 different systems. I hate Objective C, but it's what they have chosen for Cocoa, and Carbon apps do not behave like Cocoa apps on Lion (no rubber band scrollbars, no resize arrows on windows, etc...)

The more I hear about the things they do to people supporting their products, the less respect I have for Apple, and the more determined I am to never support them in any way.
Whatever you think about Apple's policies, the users LIKE the Apple products. And with Windows going nowhere, they like it even more. It'd be foolish not to consider MacOS X as a serious target.

One good example is the other thread about Apple insisting on getting 30% of ebook sales sold through reader apps.

This is abbout the app store for iOS, so what does OS X have to do with it? And yeah, I know sheeple like Apple. They especially like bending over for them, it must feel good getting screwed by Apple.
Apple is a money machine, yes, thats true. All companies do.
Did you think Microsoft was a cool organisation in the beginning? there where much more aggressive then apple back then. And now this days, as Apple becomes huge, they suck.

OS X a serious target? Don't make me laugh, we have a product for both Windows and OS X, OS X makes up only 5% of our sales. Kind of looks like a tiny little target to me.
We're talking about the Mac App store, not iOS here.
Mac OSX market share is rising, I'm sure you can see that, even though it's a lot lower than Windows atm.
Apple Macs are just more attractive to end users, it's a fact.

You mean about the company who was pretending to be an ebook publisher when they are merely a reseller and do not understand how the publishing world (which has nothing to do with Apple) operates? When kids try to play store and to not have the maturity and experience, it will bit them in the ass every time.
Apple is actually a publisher. Publishers take a chunk of money. Unlike 99.99% of the publishers out there, Apple doesn't rip developers off. Apple only takes 30%, instead of the norm which is giving you around 30% or less.

Besides needing to make software that people actually want to buy, is your software available in the App store so that OS X users are aware it exists?
