I don't suppose there's any way of controlling the blend operation used for Sprite3D? Specifically, it would be helpful if I could make use of minimum and maximum (although subtract and inv subtract would also have value).

No. That's blending mode, which is distinct from blending operation. They're still important, but they're in the context of an 'add' operation. You can sort of get the results of a subtract using some of the inverse modes, but minimum and maximum require a different operation.
